2018: Mathis played in six games as a junior, completing 25-of-54 passes for 193 yards with a touchdown. He added 56 rushing yards and three rushing touchdowns. He completed seven passes against Texas Southern for 31 yards. He ran for a two-yard touchdown against West Texas A&M. He was a perfect 4-of-4 passing for 44 yards against Humboldt State and rushed for a touchdown. He threw for a season-high 115 yards on 13-of-33 passing with a touchdown and ran for a second touchdown at Texas A&M - Kingsville.

2017: Mathis played 11 games as a sophomore, finishing the season with 1,806 yards passing and 12 touchdowns. He threw for a season-high 246 yards at West Texas A&M. He had two touchdowns and 244 yards passing with 47 rushing yards against Tarleton. He threw a season-high three touchdowns with 216 yards passing against Texas A&M - Kingsville. He rushed for a season-high 65 yards and had a 12-yard reception along with two touchdown passes against Angelo State.

 2016: Mathis played in 10 games as a freshman, throwing for 2,078 yards with 15 touchdowns. He threw for 163 yards and two touchdowns and ran for 31 yards on three carries against Sul Ross. He completed a season-high 34 passes for 368 yards and three touchdowns, and ran nine times for 39 yards against Arizona Christian. He threw for 90 yards and a touchdown against Western New Mexico while rushing for 16 yards. Mathis completed 12 passes for 147 yards against Eastern New Mexico. He threw a season-high four touchdowns and 322 yards against Oklahoma Panhandle State. Mathis threw for a pair of scores and 216 yards against MSU Texas. He had 278 yards passing and one touchdown against Texas A&M - Commerce. He passed for a season-high 403 yards with a pair of passing scores against Angelo State.
